Mediterranean Chicken & Veggie Bake
ingredients
- 4 boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp garlic powder
- Salt and pepper to taste

Preheat oven to 400°F.

Arrange chicken breasts in the center of a sheet pan.

Place the sliced peppers, zucchini, and cherry tomatoes around the chicken.

Drizzle olive oil over everything and sprinkle with herbs, garlic powder, salt, and pepper.

Bake for 25-30 minutes or until chicken is cooked through.
