- 1 lb large shrimp, peeled and deveined
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp red pepper flakes
- 1 medium zucchini, sliced
- 1 cup cherry tomatoes, halved
- Salt and pepper to taste
- 2 tbsp balsamic glaze
- Fresh parsley for garnish

In a bowl, combine shrimp, minced garlic, olive oil, oregano, thyme, red pepper flakes, salt, and pepper. Toss to coat.

In a separate bowl, toss zucchini and cherry tomatoes with olive oil, salt, and pepper.
