This vibrant pasta salad combines cherry tomatoes, cucumbers, olives, feta cheese, and a zesty lemon vinaigrette for a refreshing taste of the Mediterranean.
ingredients
- 8 oz fusilli pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup crumbled feta cheese
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/3 cup olive oil
- 2 tbsp lemon juice
- 1 garlic clove, minced
- Salt and pepper to taste
