- 1 large ripe honeydew melon, peeled and cubed
- 1 cup sugar
- 1 tablespoon pectic enzyme
- 1 gallon water
- 1 packet wine yeast

In a large pot, combine water and sugar and bring to a boil, stirring until sugar is dissolved.

Remove from heat and let cool to room temperature.

Add melon cubes to a sanitized fermentation vessel and pour the cooled sugar water over the top.

Sprinkle pectic enzyme over the melon mixture and stir to combine.

Cover the vessel with a clean cloth and let sit for 24 hours.

After 24 hours, sprinkle wine yeast over the mixture and cover with an airlock.

Allow the mixture to ferment for 1-2 weeks, or until bubbling has ceased.

Strain the mixture using a fine mesh strainer or cheesecloth into clean bottles.

Seal the bottles and let the wine sit in a cool, dark place for at least 6 months before enjoying.
