Mint Herbal Mead

- 4 lbs (1.8 kg) of wildflower honey
- 1 gallon (3.8 L) of filtered water
- 1 oz (28 g) of fresh mint leaves (lightly crushed)
- 1 packet of Lalvin EC-1118 yeast
- 1 tsp yeast nutrient
- 1 tsp yeast energizer

In a large sanitized fermentation vessel, combine the filtered water and wildflower honey, stirring until completely dissolved.

Lightly crush the fresh mint leaves to release their essential oils and aroma, then add them to the honey-water mixture.

Heat the mixture gently to about 160°F (70°C) for 10 minutes to help extract the flavor from the mint; do not boil.

Remove from heat, cool to room temperature, and then strain out the mint leaves using a fine mesh sieve or cheesecloth.

Add the yeast nutrient and yeast energizer, stirring well.

Sprinkle the Lalvin EC-1118 yeast over the surface and cover the fermentation vessel with an airlock.

Place the vessel in a cool, dark area to ferment for 4-6 weeks, checking periodically for activity.

Once fermentation is complete, siphon the mead into sanitized bottles, leaving sediment behind.

Seal and age for an additional 2-3 months for the flavors to mature, then chill and enjoy!
