Tofu-Veggie Crunch Stir-Fry

This colorful stir-fry is loaded with nutrient-rich veggies and protein-packed tofu. The crisp vegetables and firm tofu offer satisfying texture, while a savory sesame-ginger sauce brings it all together in perfect harmony.

- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small yellow onion, sliced
- 2 cups purple cabbage, chopped
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon vegetable oil
- 1 package extra-firm tofu, drained and cubed
- 2 tablespoons soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon sesame oil
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 2 tablespoons water
- 2 tablespoons sesame seeds
- Salt and pepper to taste

Heat the vegetable oil in a large skillet over medium-high heat.

Add the tofu and fry until golden brown, about 10 minutes. Remove and set aside.
