Heavenly Morning Pancakes

- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons vegetable oil or coconut oil
- Maple syrup, for serving

In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

In another bowl, beat the egg and then mix in the milk and vegetable oil (or coconut oil).

Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. A few lumps are okay; do not overmix.

Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray.

Pour about 1/4 cup of batter onto the skillet for each pancake.

Cook until bubbles form on the surface, about 2-3 minutes.
