This vibrant salad combines fluffy quinoa with juicy cherry tomatoes, crisp cucumbers, tangy feta cheese, and briny olives, all tossed in a zesty lemon-herb dressing. Perfect for a light lunch or a side dish at your next BBQ!
ingredients
- 1 cup quinoa, cooked and cooled
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup Kalamata olives, sliced
- 1/4 cup red onion, thinly sliced
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh mint, chopped
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste

In a large bowl, combine quinoa, cherry tomatoes, cucumber, feta cheese, olives, red onion, parsley, and mint.
