Mediterranean Soy-Infused Salad
ingredients
- 4 cups mixed greens (arugula, spinach, and romaine)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, thinly sliced
- 1 bell pepper (red or yellow), diced
- 1 cup kalamata olives, pitted and halved
- 1 cup feta cheese, crumbled
- ½ cup extra virgin olive oil
- ¼ cup red wine vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon dried oregano
- 1 tablespoon soy sauce
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)

In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, bell pepper, and olives.

In a separate bowl, whisk together olive oil, red wine vinegar, Dijon mustard, oregano, soy sauce, salt, and pepper until smooth.
