Banana Cassava Bread with Nuts
ingredients
- 2 ripe bananas, mashed
- 1 ½ cups cassava flour
- ½ cup unsweetened applesauce
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- ½ cup chopped walnuts or pecans (optional)

Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.

In a large bowl, mix the mashed bananas, applesauce, eggs, and vanilla extract until well combined.

In another bowl, whisk together the cassava flour, baking soda, cinnamon, and salt.

Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- 5.
If desired, fold in the chopped nuts.
- 6.
Pour the batter into the prepared loaf pan, smoothing out the top.
- 7.
Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
- 8.
Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
