These Vegan Banana Oat Muffins are moist and delicious, with a subtle sweetness and wholesome flavor. Made without oil or refined sugar, they're the perfect healthy snack or breakfast!

- 2 ripe bananas, mashed
- 1/2 cup unsweetened applesauce
- 1/2 cup maple syrup
- 1/4 cup soy milk
- 1 tsp vanilla extract
- 1 cup whole wheat flour
- 1 cup rolled oats
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/2 cup chopped walnuts

Preheat oven to 350°F and line a muffin tin with cupcake liners.

In a mixing bowl, whisk together mashed bananas, applesauce, maple syrup, soy milk, and vanilla extract.

In another bowl, combine flour, oats, baking powder, baking soda, salt, and cinnamon.

Add dry ingredients to wet ingredients and stir until just combined. Stir in walnuts

Spoon batter into muffin tin, filling each cup 3/4 of the way.

Bake for 20-25 minutes, or until a toothpick comes out clean.

Let muffins cool in tin for 5 minutes, then transfer to a wire rack to cool completely.
