- 1/2 cup mixed nuts (chopped, such as almonds, walnuts, or pecans)
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- Optional: dark chocolate chips for topping
steps
- 1.
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- 2.
In a large bowl, combine the almond flour, baking soda, and salt.
- 3.
In another bowl, mix the almond butter, peanut butter, honey (or maple syrup), and vanilla extract until smooth.
- 4.
Gradually add the wet mixture to the dry ingredients, stirring until fully combined.
- 5.
Fold in the unsweetened coconut flakes and chopped mixed nuts.
- 6.
If desired, add dark chocolate chips and mix gently.
- 7.
Scoop tablespoons of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- 8.
Press each cookie slightly to flatten, as they won't spread much while baking.
- 9.
Bake for 10-12 minutes or until the edges are golden.
- 10.
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
