Nutty Oat Energy Bars
ingredients
- 2 cups rolled oats
- 1/2 cup almonds, chopped
- 1/2 cup peanut butter (or almond butter)
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon sea salt
- 1/2 cup dried cranberries or raisins (optional)
- 1/4 cup chia seeds (optional)

Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.

In a large bowl, combine rolled oats, chopped almonds, chia seeds, and dried cranberries (or raisins) if using.

In a separate bowl, mix peanut butter, honey, vanilla extract, and sea salt until smooth.

Pour the peanut butter mixture into the dry ingredients and stir until well combined.
- 5.
Spread the mixture evenly into the lined baking pan, pressing it down firmly.
- 6.
Bake for about 20 minutes or until the edges are lightly golden.
- 7.
Allow to cool completely in the pan before lifting out and cutting into bars.
- 8.
Store in an airtight container in the fridge for up to two weeks.
