Linden Street Wassailing Mead

Warm up your winter nights with this aromatic and sweet mead, perfect for festive gatherings or cozy nights by the fire. Spiced with mulling spices and infused with linden honey, this recipe is sure to be a hit with all your guests.
ingredients
- 1 gallon spring water
- 6 mulling spice tea bags
- 2 lbs. Bearded Tree Linden Honey
- 5 grams Lalvin ICV D-47 yeast

Heat the spring water in a large pot until it reaches a simmer.

Add the mulling spice tea bags and let steep for 10 minutes.

Remove tea bags and stir in the linden honey until dissolved.
- 4.
Let the mixture cool to room temperature.
- 5.
Sprinkle Lalvin ICV D-47 yeast over the top and let sit for 24 hours.

Transfer the mixture to a sanitized fermenting vessel and cover with an airlock.

Store in a cool, dark place for 4-6 weeks, allowing the mead to ferment.
