Soft and chewy vegan cookies filled with sweet jelly and creamy peanut butter, making the perfect treat for snack time or dessert.
ingredients
- 1/2 cup peanut butter
- 1/2 cup vegan butter, softened
- 1/2 cup granulated sugar
- 1/4 cup unsweetened almond milk
- 1 tsp vanilla extract
- 1 3/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup jelly of your choice

Preheat oven to 350°F and line a baking sheet with parchment paper.

In a large bowl, cream peanut butter, vegan butter, and sugar until light and fluffy.

Stir in almond milk and vanilla extract.

Add flour, baking powder, and salt, mixing until combined.

Roll dough into 1-inch balls and place on prepared baking sheet, pressing thumb gently into centers to make a small indentation.

Fill each indentation with a small spoonful of jelly.

Bake for 12-15 minutes or until golden brown.

Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
