Pecan Perfection Vegan Ice Cream

Indulge in the creamy and nutty goodness of our vegan pecan ice cream, made with a homemade maple syrup swirl. It's the perfect balance of sweet and crunchy, and can be enjoyed guilt-free!

- 1 cup pecans, roughly chopped
- 2 cups coconut milk
- 1/2 cup maple syrup
- 2 tbsp cornstarch
- 1 tsp vanilla extract
- Pinch of salt

In a saucepan, combine the coconut milk, maple syrup, salt, and vanilla extract. Bring the mixture to a simmer.

In a separate bowl, whisk together the cornstarch with a splash of the warm coconut milk mixture. Add the cornstarch slurry back to the saucepan and stir constantly for 5 minutes until the mixture thickens.

Remove from heat and let cool completely before churning in an ice cream maker according to the manufacturer's instructions.

In the last 5 minutes of churning, add in the chopped pecans and a swirl of maple syrup.

Transfer the ice cream to a freezer-safe container and freeze for at least 4 hours or until firm.
