Crunchy chicken coated in a sweet & tangy pineapple sauce.
ingredients
- 1 lb boneless, skinless chicken breasts, cubed
- 1 cup pineapple chunks
- ½ cup pineapple juice
- ¼ cup ketchup
- 2 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tbsp cornstarch
- 1 red bell pepper, diced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- Salt and pepper to taste
- Vegetable oil for frying

In a bowl, mix pineapple juice, ketchup, soy sauce, brown sugar, and cornstarch. Set aside.

Heat oil in a pan and fry chicken until golden brown. Remove and set aside.
- 3.
In the same pan, cook garlic, ginger, onion, and bell pepper until softened.
- 4.
Add pineapple chunks and sauce mixture. Bring to a simmer.
- 5.
Add fried chicken back to the pan and stir to coat in the sauce.
- 6.
Serve hot over rice.
