Healthy Peanut Butter Protein Bites

- 1 cup rolled oats
- 1/2 cup peanut butter powder
- 1/4 cup honey
- 1/4 cup unsweetened shredded coconut
- 1/4 cup chia seeds
- 1/4 cup mini dark chocolate chips
- 1/4 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- Pinch of salt

In a large mixing bowl, combine rolled oats, peanut butter powder, shredded coconut, chia seeds, and dark chocolate chips.

In a separate small bowl, whisk together the honey, almond milk, vanilla extract, and salt.

Using your hands, roll the mixture into bite-sized balls, approximately 1 inch in diameter.

Place the energy bites on a baking sheet lined with parchment paper and chill in the fridge for at least 30 minutes to firm up.
