ingredients
- 13 oz ribeye, cut into bite-sized pieces
- 12 oz chicken thighs, boneless and skinless, cut into chunks
- 1 large onion, thinly sliced
- 14 oz celery, sliced
- 4 oz carrots, thinly sliced
- 9 oz asparagus, trimmed and cut into 2-inch pieces
- 7 oz bell peppers, thinly sliced
- 4 oz snow peas
- 4 cups low-sodium vegetable or chicken broth
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 2 tbsp low-sodium soy sauce
- 1 tsp sesame oil
- 1 tsp olive oil
- Salt and pepper to taste
- Optional: chopped green onions and sesame seeds for garnish

Set the Instant Pot to sauté mode and heat olive oil. Sauté the garlic and ginger for a minute until fragrant.

Season the ribeye and chicken with salt and pepper. Add them to the pot and cook until browned on all sides.

Add the sliced onion, celery, carrots, asparagus, bell peppers, and snow peas to the pot. Stir for a minute to coat the vegetables in the flavors.

Pour in the broth, soy sauce, and sesame oil. Stir well, ensuring the meat and vegetables are submerged.

Secure the Instant Pot lid and set to pressure cook on high for 5 minutes.

Once done, allow for a natural release of pressure for 5 minutes before manually releasing any remaining pressure.
