- 1 avocado, sliced
- 1 small carrot, peeled and grated
- 1 small tomato, sliced
- 1 cup baby spinach leaves
- 1/4 cup red cabbage, shredded
- 4 tablespoons hummus
- 2 tablespoons vegan mayo
- Salt and pepper, to taste
