ingredients
- 1 head cauliflower, chopped
- 2 cups broccoli florets
- 4 cups spinach leaves
- 1 cup kale leaves, chopped
- 1 cup cooked beans (black or kidney)
- 2 carrots, thinly sliced
- 2 beetroots, thinly sliced
- Salt and pepper
- Olive oil

Preheat oven to 400°F.

In a large bowl, mix together chopped cauliflower, broccoli, and thinly sliced carrots and beetroots.
