ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, chopped
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup green beans, trimmed
- 1 can diced tomatoes
- 6 cups vegetable broth
- 1 tsp dried thyme
- Salt and pepper to taste
