Raspberry-Chocolate Cheesecake Bliss

- 2 cups cream cheese, softened
- 1 cup granulated sugar
- ½ cup sour cream
- 3 large eggs
- 1 teaspoon vanilla extract
- 6 ounces dark chocolate, melted
- 1 cup fresh raspberries
- 2 tablespoons raspberry preserves
- Fresh raspberries for garnish (optional)

Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.

In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth.

Add the sour cream, eggs, and vanilla extract, mixing until well combined.

Stir in the melted dark chocolate until fully incorporated.

In a small bowl, combine the fresh raspberries and raspberry preserves, gently mashing to create a swirlable mixture.

Pour half of the cheesecake batter into the prepared pan, then drop spoonfuls of the raspberry mixture and swirl gently with a knife.

Top with the remaining cheesecake batter and swirl in more raspberry for a marbled look.

Bake for 50-60 minutes, or until the center is set but still slightly jiggly.

Turn off the oven and leave the cheesecake in for an additional hour to cool gently.

Remove from the oven and let cool to room temperature before refrigerating for at least 4 hours, ideally overnight.
