- 3/4 gallon water
- 3 pounds honey
- 2 1/2 teaspoons yeast (one bundle)
- 3/4 cup loosely chopped fresh mint
- 10 key limes

In a large pot, heat 1/2 gallon of water over medium heat and dissolve the honey, stirring until fully combined.

Remove from heat and add the remaining 1/4 gallon of cold water to cool the mixture.

Once cooled to room temperature, add the yeast, stirring gently to incorporate.

Zest five key limes and juice all ten, ensuring no seeds are included. Add zest and juice to the pot.
