- 2 cups turkey drippings (or chicken broth if unavailable)
- 1/4 cup all-purpose flour
- 1/2 cup water
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh sage, chopped
- Salt, to taste
- Black pepper, to taste
- Optional: 1/4 cup white wine or sherry for depth
