- 1 ½ tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 1 cup Baileys Irish Cream
- 2 tsp vanilla extract
- 1 cup boiling water For the Buttercream:
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- ¼ cup Baileys Irish Cream
- 2 tbsp heavy cream
- 1 tsp vanilla extract For the Ganache:
- ½ cup heavy cream
- 4 oz semi-sweet chocolate, chopped
steps
- 1.
Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- 2.
In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
- 3.
Add eggs, milk, vegetable oil, Baileys, and vanilla to the dry ingredients. Beat on medium speed for 2 minutes.
- 4.
Stir in boiling water (batter will be thin). Pour evenly into prepared pans.
- 5.
Bake for 30-35 minutes or until a toothpick comes out clean. Let cool in pans for 10 minutes, then transfer to wire racks.
- 6.
For the buttercream, beat the softened butter until creamy. Gradually add powdered sugar, then mix in Baileys and heavy cream until smooth.
- 7.
Once cakes are cooled, place one layer on a serving plate and spread buttercream on top. Add the second layer and frost the top and sides.
- 8.
For ganache, heat heavy cream until simmering, then pour over chopped chocolate. Let sit for a few minutes before stirring until smooth.
- 9.
Drizzle ganache over the iced cake for an extra touch of decadence.
