Simple Simon Says Porter
ingredients
- 6.6 lb. Briess CBW Porter malt syrup (17°L)
- 0.5 lb. Briess CBW Traditional Dark DME (30°L)
- 1.5 oz. UK WGV pellets (6% AA)
- Wyeast 1028 London Ale (or equivalent)

Gather all ingredients and thoroughly sanitize your brewing equipment.

In a large pot, bring 2 gallons of water to a boil, then remove it from heat.

Add the Briess CBW Porter malt syrup and Briess CBW Traditional Dark DME, stirring until fully dissolved.
- 4.
Return the mixture to the boil and add the UK WGV pellets. Boil for 60 minutes, stirring occasionally.
- 5.
After 60 minutes, cool the wort rapidly using a wort chiller or ice bath.
- 6.
Transfer the cooled wort to a sanitized fermenter, adding enough water to reach a total volume of 5 gallons.
- 7.
Pitch the Wyeast 1028 London Ale yeast according to the package instructions.

Seal the fermenter with an airlock and ferment in a dark, temperature-controlled environment for 1-2 weeks.
- 9.
After fermentation, siphon the beer into sanitized bottles, adding priming sugar if desired, and cap them.
