Double the Cheesy Whole Wheat Pastry Snack

- 3 cups whole wheat pastry flour
- 2 cups grated Romano cheese
- 1 teaspoon salt
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 2 teaspoons garlic powder
- 1 cup unsalted butter, chilled and cubed
- ½ cup ice-cold water
- ½ cup grated Romano cheese (for topping)

In a large bowl, combine whole wheat pastry flour, grated Romano cheese, salt, basil, oregano, and garlic powder.

Using a pastry cutter or your fingertips, cut in the chilled butter until the mixture resembles coarse crumbs.

Gradually add ice-cold water, a tablespoon at a time, while gently mixing with a fork until the dough comes together.

Shape the dough into two discs, wrap them in plastic wrap, and refrigerate for at least 30 minutes.

Preheat the oven to 375°F (190°C) and line two baking sheets with parchment paper.

On a lightly floured surface, roll out the chilled dough to ¼ inch thickness.

Using a cookie cutter of your choice, cut out shapes and place them on the prepared baking sheets.

Sprinkle the remaining grated Romano cheese on top of each pastry shape.
