Spinach, Feta, and Cheese Pastries
ingredients
- 1 sheet phyllo dough, thawed
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup feta cheese, crumbled
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 tablespoon sesame seeds (optional)

Preheat the oven to 375°F (190°C).

In a skillet, heat olive oil over medium heat.

Add minced garlic and sauté until fragrant, about 1 minute.

Add chopped spinach and cook until wilted, approximately 3-4 minutes. Remove from heat and let cool.

In a bowl, mix the cooked spinach, ricotta, mozzarella, feta, Parmesan, beaten egg, salt, black pepper, and nutmeg until well combined.

On a lightly floured surface, take one sheet of phyllo dough and brush it lightly with olive oil.

Layer another sheet on top and repeat the process. Cut the layered phyllo into squares (about 4x4 inches).

Place a tablespoon of the spinach mixture in the center of each square.
- 9.
Fold the corners of the phyllo over the filling to create a pocket. Pinch the edges to seal.
- 10.
Place the pastries on a baking sheet lined with parchment paper.
- 11.
If desired, brush the tops with extra beaten egg and sprinkle with sesame seeds.
- 12.
Bake for 20-25 minutes or until golden brown. Serve warm and enjoy!
