Royal Christmas Cake

- 1 cup glazed cherries, halved
- 1/2 cup brandy, plus extra for soaking
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 4 large eggs
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cloves
- Zest of 1 orange
- 1 cup marzipan
- 2.2 lbs ready-made white icing
- Food coloring (red, green)

In a large bowl, combine the dried fruit, cherries, and brandy. Cover and let soak overnight.

Preheat the oven to 325°F. Grease and line a 9-inch round cake tin.

In a separate bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs one at a time.
