Wholesome Applesauce Rye Cake

- 1 ½ cups rye flour
- 1 cup unsweetened applesauce
- ½ cup coconut sugar
- ¾ cup buttermilk
- 3 large egg whites
- ½ teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- Optional: ½ cup chopped nuts or dried fruits

Preheat the oven to 350°F (175°C) and lightly grease a 9-inch round cake pan.

In a large bowl, whisk together the rye flour, baking soda, baking powder, cinnamon, and salt until well combined.

In a separate bowl, mix the applesauce, coconut sugar, buttermilk, and egg whites until smooth.

Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

If desired, fold in chopped nuts or dried fruits.

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
