- 2 lb beef chuck, cut into 1.5-inch cubes
- 2 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 bell pepper, chopped
- 1 can (14 oz) diced tomatoes
- 1 cup red wine
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 bay leaf
- 2 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley, for garnish

In a large pot or Dutch oven, heat olive oil over medium-high heat.

Season the beef cubes with salt and pepper, then brown them in batches until seared on all sides. Remove and set aside.
