ingredients
- 3 lbs beef oxtails
- 2 tablespoons vegetable oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 1-inch piece ginger, grated
- 2 stalks green onions, chopped
- 2 carrots, sliced
- 1 bell pepper, chopped
- 1 teaspoon thyme
- 1 teaspoon allspice
- 1 teaspoon paprika
- 1 cinnamon stick
- 1 (14 oz) can diced tomatoes
- 4 cups beef broth
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- Salt and pepper to taste
steps
- 1.
Rinse the oxtails under cold water and pat dry with paper towels.
- 2.
In a large pot, heat vegetable oil over medium-high heat. Sear the oxtails until browned on all sides, then remove and set aside.
- 3.
In the same pot, sauté onion, garlic, ginger, and green onions until fragrant and softened, about 3-4 minutes.
- 4.
Add carrots and bell pepper, cooking for an additional 2-3 minutes.
- 5.
Stir in thyme, allspice, paprika, and cinnamon stick, cooking for 1 minute to release the spices' aromas.
- 6.
Return the oxtails to the pot and add canned tomatoes, beef broth, soy sauce, and brown sugar.
- 7.
Bring the mixture to a boil, then reduce heat to low and cover. Let simmer for 2.5 to 3 hours, stirring occasionally until the meat is tender.
- 8.
Season the stew with salt and pepper to taste before serving.
