- 1 cup roasted bell peppers, sliced
- 1 cup roasted zucchini, diced
- 1 cup roasted cherry tomatoes
- 1 cup roasted red onions, thinly sliced
- 6 large eggs
- 1 cup whole milk
- 1 cup shredded cheddar cheese
