Tender bell peppers filled with a flavor-packed mix of chopped apples, spicy chorizo, and hearty rice, all baked together for a delicious and satisfying meal.
ingredients
- 4 bell peppers
- 1 lb chorizo sausage, casings removed
- 1 cup cooked rice
- 1 apple, peeled, cored, and diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 1 cup shredded cheese (optional)

Preheat oven to 375°F.

Cut the tops off the bell peppers and remove the seeds and membranes.

In a skillet, cook chorizo until browned. Add onion, garlic, and apple until softened.

Stir in cooked rice, paprika, cumin, salt, and pepper.

Spoon filling into peppers, top with cheese if desired.

Place peppers in a baking dish, add a little water to the bottom of the dish.

Cover with foil and bake for 25-30 minutes until peppers are tender.
