Smokey chipotle peppers, sweet apples, and savory chorizo filling encased in a crispy pastry shell. A perfect blend of flavors and textures in every bite.
ingredients
- 1 lb chorizo sausage
- 2 chipotle peppers in adobo sauce, minced
- 2 apples, peeled and diced
- 1 onion, finely chopped
- 1 tsp cumin
- Salt and pepper to taste
- 1 package of empanada dough
- Egg wash (1 beaten egg)

Preheat oven to 375°F.

In a skillet, cook chorizo until browned. Add onions, chipotle peppers, apples, cumin, salt, and pepper. Cook until onions are translucent.

Roll out empanada dough and cut circles.

Fill each circle with chorizo mixture, fold over, and seal edges.

Brush with egg wash and bake for 20-25 minutes or until golden brown.
