Savory Avocado and Bell Pepper Frittata

- 1/2 large red bell pepper, diced
- 1/2 medium onion, finely chopped
- 1 ripe avocado, peeled, pitted, and diced
- 4 large eggs
- 2 tablespoons milk
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/2 tablespoon olive oil
- 2 tablespoons shredded cheddar cheese
- Fresh cilantro, for garnish

Preheat the oven to 375°F (190°C).

In a medium ovenproof skillet, heat the olive oil over medium heat.

Sauté the diced red bell pepper and chopped onion until softened, about 5 minutes.

In a bowl, whisk together the eggs, milk, salt, and black pepper.

Add the diced avocado to the egg mixture, gently folding to combine.

Pour the egg and avocado mixture over the sautéed vegetables in the skillet. Stir briefly to distribute the ingredients evenly.

Cook the frittata on the stovetop for 3-4 minutes, or until the edges start to set.

Sprinkle the shredded cheddar cheese over the top of the frittata, then transfer the skillet to the preheated oven.
