Hearty Tomato Rice Casserole
ingredients
- 1 cup long-grain rice
- 2 cups crushed tomatoes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups vegetable broth

Preheat the oven to 350°F (175°C).

In a large skillet, heat olive oil over medium heat. Add the chopped onions and sauté until they are translucent.

Stir in the minced garlic and cook for another minute until fragrant.

In a large mixing bowl, combine the sautéed onion and garlic mixture with rice, crushed tomatoes, vegetable broth, Italian seasoning, salt, and pepper; stir well.

Transfer the mixture into a greased 9x13 inch baking dish.

Cover with foil and bake for 30 minutes.

Uncover and bake for an additional 15-20 minutes or until rice is tender and liquid is absorbed.
