A flavorful and hearty curry made with tender chickpeas, fresh zucchini, and tomatoes simmered in aromatic spices. This vegetarian dish is perfect for a quick and nutritious weeknight meal.
ingredients
- 1 can chickpeas, drained and rinsed
- 1 zucchini, diced
- 1 can chopped tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp turmeric
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
