Tender beef, flavorful broth, hearty vegetables cooked to perfection.
ingredients
- 2 lbs beef chuck roast, cubed
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 celery stalks, chopped
- 3 potatoes, cubed
- 4 cups beef broth
- 1 cup red wine
- 2 tbsp tomato paste
- 2 bay leaves
- Salt and black pepper to taste
- Fresh parsley for garnish

Season beef with salt and pepper. Brown in Dutch oven with olive oil. Remove and set aside.

Sauté onions and garlic in the same pot until softened. Add carrots, celery, and potatoes.

Return beef to pot. Pour in broth, wine, tomato paste, bay leaves. Bring to boil, then simmer for 2 hours.

Adjust seasoning. Garnish with parsley before serving.
