- 1/4 White Onion (small, diced)
- 3 Garlic (clove, minced)
- 1 Eggplant (large, cubed)
- 1 tsp Curry Powder
- 1/2 tsp Cumin
- Sea Salt & Black Pepper (to taste)
- 1 1/2 cups Canned Coconut Milk
- 3 cups Diced Tomatoes (from the can with juices)
- 2 tbsps Cilantro (chopped)
