Savory Farro and Kale Bowl

- 1 cup farro
- 1 lb ground pork
- 2 cups kale, chopped
- 8 oz mushrooms, sliced (cremini or button)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup low-sodium vegetable broth
- 1 cup water
- ½ cup low-fat sour cream
- 2 tbsp olive oil
- 1 tsp dried thyme
- ½ tsp black pepper
- Optional: Fresh parsley for garnish

Rinse the farro under cold water and set aside.

Turn the Instant Pot to "Sauté" mode. Add olive oil and heat.

Close the lid and set the Instant Pot to "Manual" for 12 minutes.

Once cooked, carefully release the pressure and open the lid. Stir in low-fat sour cream until creamy.
