Tender lamb stewed with sweet apricots, aromatic spices, and hearty vegetables in a traditional South African potjie pot.
ingredients
- 2 lbs lamb stew meat, cubed
- 1 cup dried apricots
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, cubed
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp cinnamon
- 1 tsp paprika
- 1/2 tsp turmeric
- Salt and pepper to taste
- 2 cups beef broth
- 2 tbsp olive oil

Heat olive oil in potjie pot over medium heat.

Brown the lamb meat on all sides.

Add onions and garlic, cook until translucent.
- 4.
Stir in spices and season with salt and pepper.
- 5.
Add apricots, carrots, and potatoes.
- 6.
Pour in beef broth and bring to a simmer.
- 7.
Cover and cook over low heat for 2-3 hours, stirring occasionally.
- 8.
Adjust seasoning if needed before serving.
