Spiced Cocoa Stout

Indulge in a rich, aromatic chili with ground lamb, exotic spices, and a touch of chocolate for a deep, flavorful experience like no other.
ingredients
- 1 lb ground lamb
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 2 red bell peppers, diced
- 1 jalapeno pepper, seeded and minced
- 2 cans (14 oz each) diced tomatoes, with juice
- 1 can (15 oz) dark stout beer
- 2 tbsp chili powder
- 2 tbsp cocoa powder
- 2 tsp ground cumin
- 2 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp cinnamon
- 1/2 tsp cayenne pepper (optional for extra heat)
- Salt and pepper, to taste
- 1 cup beef or chicken broth
- 1 dark chocolate bar (70% cocoa), grated

In a large pot, brown the ground lamb over medium heat until no longer pink. Drain excess fat.

Add onions, garlic, bell peppers, and jalapeno pepper to the pot. Sauté until vegetables are tender.

Stir in diced tomatoes, stout beer, chili powder, cocoa powder, cumin, smoked paprika, oregano, cinnamon, cayenne pepper (if desired), salt, and pepper.

Pour in the broth, bring to a boil, then reduce heat and simmer for 1 hour, stirring occasionally.

Sprinkle grated dark chocolate into the pot and stir until melted and well combined.

Continue simmering for an additional 30 minutes.
