ingredients
- 1 lb lamb stew meat, diced
- 1 cup dried green lentils, rinsed
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 2 cups chicken broth
- 1 tsp dried rosemary
- Salt and pepper to taste
- Olive oil
- Grated Parmesan cheese, for serving (optional)

In a large oven-safe skillet, brown lamb in olive oil over medium-high heat.
