Hearty Loaded Meat Lover's Stew Lasagna

- 9 lasagna noodles
- 1 pound ground chicken
- 1 pound ground beef
- 1 cup diced hotdogs
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil

- ¼ teaspoon black pepper
- 1 can (15 oz) tomato sauce
- 1 can (14 oz) diced tomatoes
- 2 cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- 2 potatoes, thinly sliced
- 4 eggs, lightly beaten
- Fresh parsley, chopped (for garnish)
- 1 tablespoon curry powder
- 2 cups vegetable or chicken soup

Preheat the oven to 375°F (190°C). Boil the lasagna noodles according to the package instructions until al dente. Drain and set aside.

In a large skillet, cook the ground chicken, ground beef, bacon, and hotdogs over medium heat until browned. Drain excess fat.

Add the chopped onion, minced garlic, dried oregano, dried basil, salt, and black pepper to the skillet. Cook for 5 minutes until the onions are translucent.

Stir in the tomato sauce, diced tomatoes, curry powder, and vegetable or chicken soup. Simmer for 10 minutes, allowing the flavors to meld.

In a 9x13 inch baking dish, spread a thin layer of the stew sauce on the bottom. Arrange 3 lasagna noodles on top, covering the sauce.

Next, layer the sliced potatoes evenly over the noodles, followed by a layer of the stew sauce and a sprinkle of mozzarella and cheddar cheese.

Repeat this process for the remaining ingredients, excluding the potatoes.

Pour the lightly beaten eggs evenly over the top layer of cheese.

Cover the baking dish with aluminum foil and bake for 30 minutes.

Remove the foil and bake for an additional 20 minutes until the cheese is bubbly and golden brown.

Once cooked, let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
