Savory Mushroom-Stuffed Meatloaf

- ½ yellow onion, chopped
- 1 carrot, chopped
- 1 celery stalk, chopped
- 1 cup button mushrooms, chopped
- ½ red bell pepper, chopped
- 1½ lbs lean ground beef
- 2 eggs
- 1 cup mozzarella cheese, shredded
- 1 cup Italian breadcrumbs
- 1 tsp salt
- 1 tsp pepper
- 1 cup Rao’s Homemade® Marinara Sauce

In a skillet, sauté onions, carrots, celery, mushrooms, and red bell pepper until tender.

In a mixing bowl, combine ground beef, sautéed vegetables, eggs, mozzarella, breadcrumbs, salt, and pepper. Mix well.

Spread half of the meat mixture onto a sheet of aluminum foil, forming a rectangle.

Create a well down the center, and fill it with the remaining sautéed vegetables and additional mozzarella.

Carefully fold the sides of the meatloaf over the filling, sealing it into a loaf shape.

Place a trivet in the Instant Pot and add water. Gently place the meatloaf on the trivet.

Close the Instant Pot, set to manual high pressure, and cook for 25 minutes. Allow natural pressure release for 10 minutes.
- 8.
Carefully remove the meatloaf from the Instant Pot and transfer it to a baking dish.
- 9.
Spread the marinara sauce evenly over the meatloaf.
- 10.
Broil in the oven for 5 minutes or until the sauce is bubbly and slightly browned.
