Savory Orzo and Rice Medley

This delicious Savory Orzo and Rice Medley combines the rich flavors of orzo, long-grain rice, and a variety of spices to create a hearty dish. Enhanced with creamy coconut milk, beans, and spices, it's perfect as a main course or a side dish. Easy and quick to prepare, it's ideal for busy weeknights or cozy family dinners!
ingredients
- 2 packs of orzo
- 1 pack of long-grain rice
- 2 packs of long-grain microwavable rice
- 1 can of chopped tomatoes
- 1 can of coconut milk
- 1 can of chickpeas, drained and rinsed
- 1 can of mixed beans, drained and rinsed
- 1 tbsp garlic granules
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tbsp Cajun seasoning
- Sea salt and black pepper, to taste
- 2 tbsp olive oil
- 2 cups water
- Fresh basil or parsley, for garnish

In a large pot, heat the olive oil over medium heat.

Add the garlic granules, cumin, smoked paprika, and Cajun seasoning; sauté for 1 minute until fragrant.

Stir in the orzo and long-grain rice, cooking for another 2-3 minutes, allowing the flavors to meld.

Pour in the canned chopped tomatoes, coconut milk, and water. Stir well and bring to a gentle simmer.

Cover the pot and reduce the heat, cooking for about 15 minutes until the rice is tender and liquid is absorbed.

Gently fold in the drained chickpeas and mixed beans; season with sea salt and black pepper to taste.

Remove from heat and let sit for 5 minutes to thicken.
