Herb Crusted Salmon Quinoa Bowl

- 1 cup quinoa
- 2 cups water
- 1 lb salmon fillet
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon
- 2 tbsp olive oil
- 1 tsp dijon mustard
- 1 clove garlic, minced
- Salt and pepper to taste

Preheat oven to 400°F.

Place salmon fillet on a baking sheet, drizzle with olive oil, and season with salt and pepper.

Roast for 15-20 minutes, or until salmon is cooked through.

In a medium saucepan, bring water to a boil. Add quinoa, reduce heat to low, and simmer for 15 minutes, or until quinoa is tender.

Remove from heat and let cool.

In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, and parsley.

In a small bowl, whisk together lemon juice, olive oil, dijon mustard, garlic, salt, and pepper to make the dressing.

Flake the roasted salmon and add to the quinoa salad.

Drizzle with the lemon herb dressing and toss to combine.
