Savory Sausage and Pepper Strata

- 1 lb Italian sausage, crumbled
- 1 tablespoon olive oil
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 green bell pepper, diced
- 1 medium onion, diced
- 8 large eggs
- 2 cups whole milk
- 1 teaspoon dried Italian herbs (oregano, basil)
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 8 cups day-old bread, cubed (ciabatta or sourdough)
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)

Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.

In a skillet over medium heat, cook the crumbled Italian sausage until browned. Drain excess fat and set aside.
